Experiment with a ginger, plum and honey mince pie

Had to have a go. Decided to experiment... ate half a mince pie filled with ginger plum and honey and two small shortcake biscuits with my coffee. Tested myself later and the result was a pre diabetic 8.7. As most my other reading are 5.5-6.5. It was a bit a surprise not to mention a blemish in my food diary. But as I won't be eating another until Xmas 2021, it was interesting to see the difference a minor carb increase (well may be not so minor, about 20 ) can make
 
Love the sound of those mince pies.... where did you get them or did you make them yourself?

Personally 2 shortcake biscuits alone would be a big carb increase for me. That said I have treated myself to the odd mince pie this festive season, but of course I have the benefit of being able to inject insulin to cover it. It is still tricky keeping levels in range but I get better the more I practice 😉 !!! The box will be empty soon and that will be it until next year. It has lasted 2 months as an occasional treat which I think is pretty impressive and they are keeping remarkably well!

Just that combination of flavours you mention sounds really interesting as an alternative.
 
As you say, the next one will be 2021 so no need for panic. I had my usual christmas day tea of turkey and crisp sandwich in white bread with a pickled onion on the side and it shot up to 9.7, but as that's less than bread used to do to me, and since it will be 12 months until I have another I'm happy with that! Not as exotic as your ginger, plum and honey though...sounds worth it to me! :D

I am afraid baking isn't really one of my ŕange of skills. The box of four was bought in Waitrose for the post Xmas fantastic price of 40p. How could I not take advantage of this opportunity? The shortcake biscuits are tiny and 2.7 carbs each. Just interesting that the combination could make a difference.

Mince pies are hugely high carb though, so not really surprising that they spiked you. What was the carb content of a whole one?
For those of us on insulin we start off by assuming that 10g carbs will raise our BG by 3mmols in the absence of insulin so I actually think your result wasn't that bad.

The total carb content for one of these beauties was a whopping 39, which is why I only ate half plus the 2 shortbread biscuits 2.7 each Your calculation is a fair approximation. As you say the result of 8.7 wasn't too bad. But Xmas is over and so is the added carb content to my diet!

39g carbs is not bad for a mince pie. Lidl ones are 45g carbs each.

You have just reminded me , I have a box of mini mince pies in the cupboard, they will be bought out into the limelight tomorrow.

Those Mince pies sound gorgeous . I no longer shop at WR as Asda has given me a recurring weekly slot
I have just discovered that first thing in the morning I can have coffee with cream and two shortcake biscuits without having to jab in any rapid and my Libre graph hardly shows a blip , guess it’s the cream helping me out.
