Hello everyone.
My name's Steve and I'm a type 2 trainee diabetic, (feel as though I've joined AA saying that).
I was diagnosed diabetic in March this year and after an initial enthusiasm with diet and excercise I've lost the will, a bit, too many cakes and crisps and not enough excercise for my own good.
Reading through some of the entries in the forum I realise I've had it easy. When the doctor told me I was diabetic I wasn't scared, frightened, worried, panic struck annoyed, asking 'Why Me' or anything like that, I was amused. I told the doc it was his fault and he's a jinx. I've only seen him twice in three years and both times he's told me I've got something long lasting, (hayfever last time, hayfever, at my age, tut).
Like I said, I've been lucky, I don't need insulin or tablets, just a slightly better balanced diet. I have a great wife who cooks most things from scratch so we don't eat a lot of pre-prepared food, or that McDonalds/Burger King/ KFC struff, so I haven't had to give up anything, just cut down on the Mars bars and crisps.
One thing that has got to me of late though is nibbles. I like my nibbles, especially when I've got my nose in a good book, or I'm watching TV. Normally it would have meant one of the aforementioed Mars or packet of crisps, but now, I'm stumped, and handful of fruit just doesn't cut it, you can get sick of fruit after a while, and veg.
I've enjoyed looking around the forum, some great stuff in there, but one small gripe if I may be so bold. Recipes. Yes I know they are there, and some look good, can't wait to try the cake. But, and this is a bug-bear with the Diabetes UK web site recipes as well, a lot of them need a cooker, but we don't possess one, beloved won't have one in the house. Everything is steamed, grilled, microwaved, griddled*, baked, and sometimes deep fried, (naughty boy), but there aren't a lot of recipes around for steamed or microwaved dishes.
Yes I know, beloved can probably sort that out, but I want to have a go myself and my microwave experience consists of put milk in cup, microwave for 70 seconds, stir in drinking chocolate powder, drink. So, if you have any tried and tested microwave recipes I'd love to see them.
I've waffled enough for now, so I'll be off. Looking forward to getting to know you all better.
*If you fancy egg on toast, don't want to fry it, and haven't got a griddle, dig in the cupboard and drag out that old sandwich maker, works a treat.
