Hello Everyone,

My other half has found a recipe for an omelette type thing (I think, I'm at work he's described it over the phone...) and it requires 4 more egg whites than whole eggs.

It's very sweet of him to be looking for something he can cook for me when I come off duty on Monday morning, but before he starts cracking the eggs I'd really like to know what the 😱 we can do with the 4 spare egg yolks.

Does anyone have any suggestions? They'd be most appreciated (especially if they don't involve making mayonnaise!)

I seem to recall seeing recipes for chocolate mousse containing egg yolks, maybe worth googling.
 
Thank you both for those suggestions - I'm still very new to this so I probably shouldn't go too heavy on the sugar/flour side of things but....I've got to learn to deal with such things, may as well be sooner rather than later :D

Will set the other half onto Google to see what he can find. He's been busy looking for recipes with low carb content for me - now I shall send him off to find treat recipes! Bless him 🙂
 
You can freeze egg yolks if you mix them with a few drops of water and put them in a small lidded pot, I've done this when I've had spare yolks. If you freeze them individually, I've defrosted them one at a time to add to scrambled egg or omelette, just to use them up. Makes the omelette taste very rich, but yummy.
Otherwise, you could use them in an egg custard, with a tiny bit of sugar, or artificial sweetener if you want to keep the carb content low. I'm sure someone on here has said they do a creme brûlée and don't add any sugar to the mix, just a tiny bit on top to caramelise.

I don't have a freezer so will have to hope they last in the fridge for a day or so - I think this time we'll have to do some form of scrambled egg, next time we'll be prepared with ingredients etc to try some of these delicious ideas :D
