I bought a leg of pork yesterday as it was on promotion,afer cooking it,I had more meat than I expected,I'm wondering now if it's healthy to eat for a diabetic,I have enough for at least another 3 days,my diet plan that I am filling in for the doctor is due to be handed in on Monday,Perhaps it's not the best idea to say that I had pork 4 nights in a row 😎,I did eat it with plenty of vegatables though
It wasn't tender enough for my mum and my lad didn't want any hence me being left with all of the pork

For us meat eaters pork is fine. Which reminds me , I’ve got some pork loin steaks in the freezer , guess what we’ll be having for dinner tomorrow .

Erm .... for you food diary it could become chicken

Have I missed something here? I never knew pork was not suitable for diabetics. What is wrong with pork three days running? What if one has a ham salad Monday, pork chops and veg Tuesday, gammon steak on Wednesday (they are all pork).

Why not try making some sugar free or sugar substitute apple sauce? The only downside is that, unlike preserves etc., made with sugar, it may not keep as long. You could make also make a smaller quantity by reducing all ingredients accordingly. I don’t think the natural sugar in the apples in the quantity of a serving would be too harmful. Worth trying.

As apple sauce is basically stewed apple, it might be handy to wait until the autumn when apples are in season, make a large amount of your own sauce to your own recipe, freeze spoonfuls in the ice cube trays (take out when frozen to make more in the same containers) store in bag or box in freezer and you have ready portioned instant apple sauce that wont go bad.
