I'm trying to lose weight and I have done so, I have stripped my carbs down to a low level after my diagnosis of T2 a month ago,I eat mainly tuna or chicken breasts,cooked vedge or salads.
After reading today I feel that I should be consuming a lot more fat as I supose that will be my energy source but chicken breasts and tuna don't have much fat.
Can anyone point me in the right direction,I do have nuts but I'm always worried about having too much,I suppose it's a balance of eating enough fats for fuel but then I'm worrying that I'm not going to lose any weight as I'm eating the fats,it's a different culture for me,so what should I get from the shops that has a good fat content to nourish me.
I'm cycling to Tescos later if it stays dry and I'm going to treat myself to a joint of pork 😉

Try having chicken thighs instead of the breast. Roasted on a rack so the skin is crisp they are delicious either hot or cold.
Use the juices and fat from the tray to cook the veges.

I will get some,I assume that they are on the bone from the supermarket?,I like eating the skin
 
Yes. Most supermarkets have packs - usual weight around a Kg and quite cheap.

Hi @Drummer I had stir fry vegetables last night that I got from Lidl they were oriental style vegetables,I had stir fry veg on my mind after hearing you talk about them a few times,it was lovely,what oil would you suggest that would be of the most benefit for me to fry them in?
 
As Lilian mentions - cheese, butter etc. and I've just had salami, I just yearned for it today along with some brie cheese 😛
 
Ribeye steak, pork belly, peanut butter (Aldi do a decent one, 100% peanuts), avocado oil. Try cooking your veg in butter, coconut oil, olive or avocado oil. Add cream eg creamed spinach. Avocados are one of the very best things you can eat...high fat, high fibre. Make an olive or avocado oil dressing for salads..just add some lemon or lime juice, salt, pepper, maybe some garlic and chilli if you fancy. 🙂

Hi thanks,I will probably pop to Aldi tomorrow,with regards to the peanut butter can you suggest anything that I can serve this with as I suppose toast and crackers have too many carbs,I do have celery sticks to dip though,I will get more avacados I will have to keep my eye on them this time so they don't go brown 🙂

It very much depends on the type of avocado. Hass avocados are supposed to be brown/almost black and in my opinion they are the best avocados. I have been getting them from Lidl and they have been really good although not as good as the ones my brother grows in his garden in Tenerife!! Maybe with global warming we will be able to grow our own soon.... I once had one sprout and start growing in my compost bin!
 
Since I no longer eat crisps or any other savoury snacks or biscuits due to being very low carb, I very occasionally treat myself to a packet of pork scratchings..... was just craving something and happily found one in the back of the cupboard.... naughty but nice!! 😳
 
I just stick a spoon in the peanut butter jar whenever I feel like it! 😉
It’s handy when you fancy something a bit savoury or just to have a spoonful just before you eat your meal.
I also sometimes blend it with a bit of water to loosen it, add some spices, chilli and garlic and pour over a salad or stir fry.

I save the fat from the joints I cook - I put them on racks in the halogen oven, over a tray, and use the juices and fat to cook the veges to go with the meat, as I don't use gravy.
I have a bottle of light olive oil which I sometimes use for eggs, but that is used mostly on salads with wine vinegar.
My cooking is - in some ways - very old fashioned.

Nothing wrong with old fashioned cooking 😉,you do that with a twist though,with your halogen oven,I resisted buying one of those for years and years but ended up buying one 2 years ago,my son and I love it in fact when the last one broke we spent a week feeling sad until I was able to replace it.I haven't done veg in it though,whats your method doing that besides the fat on the grill dripping above?
 
For frozen stuff I tend to steam it, in one of those stacking on the stove top over boiling water sets - but I have a wok, the Tefal Actifry is OK for sturdy things, the paddle can mash delicate things though, or if the timing is right I roast them in one of the oven trays - I take out the meat, tip out some of the juice and fat from the tray then put the veges in and use fairly high temperatures on already steamed veges just to dry them out and add in the fatty goodness of the meat juices.
