yesterday i had brown bread sandwich and sugar free jelly and my b/s was 9.4 after today i have been really bad a white bread chicken and stuffing sandwich, small bit of melon and a dairy mil choc bar (first bit of choccy for months) was expecting it to be high a hour after it was only 7.5 really dont understand how all this works sometimes :confused:

Have you done more exercise than you did yesterday? That could have some bearing on the results.
 
The fat in the chocolate will also slow the spike. Do you have butter or margarine on your bread?
 
no nothing different i am resting at the minute , the sandwich was shop brought so not sure.

It's hard to tell based on just one or two readings - do you know what your level was before eating? Also, it's a very complex thing and very difficult to know when the peak of your levels is. White bread is notoriously faster to push levels up than pure sugar (sugar has to go through a process to convert to glucose, refined flour doesn't) so they might have shot up and been on the way down again. What was in your brown bread sandwich?
 
As Caroline suggested, the fat in the chocolate and the stuffing will slow the spike and make it last a lot longer than normal, possibly at a lower level.

They appear to make your control better but, because they have a higher calorific value, can cause weight gain, which can make long term control far worse.

Better to go for low GI and low fat. That way your BGs will stay lower without the additional risks.🙂

The other thing to bear in mind is that not all 'brown' bread is better for your BGs. I think it has to do with how finely milled the grains are... Stoneground wholemeal would be better than regular wholemeal, but often there is a little (but not as much as you might hope) difference between 'brown' and white, though the fibre might help your digestive system.

The better breads for me are seedy types (like burgen). The unmilled grains being very difficult for the gut to process and will often just pass through.
