Sorry to sound dim..... I was Diagnosed 3 months ago with Diabetes 2.I have 500mg Metformin with meals 3 times aday. I calculate carbs. My breakfast was 2 Weetabix, skimmed milk, a table spoon of sugarcane yogurt and a few blueberries, totalling 25Carbs Lunch, 2 slices of toast and peanut butter,no added butter. I used your Chicken thighs in the oven for dinner. But how is it that myreadings are 9, between meals. I can't cut down any more. No treats, Alcohol or Coffee.

I think you may be underestimating your carbs, the weetabix alone would be 28g carb so your breakfast is going to be more like 40g carb. 2 slices of toast unless it is low carb bread could well be 25g carb.
It really does depend on when you take your readings, the usual regime so see if you are tolerating meals is to test just before you eat and then after 2 hours. If the increase is more than 2-3mmol/l then the meal was too carb heavy.
I'm not too sure what sugarcane yoghurt is but it sounds as if it has lots of carbs just from the name, full fat Greek yoghurt would be a better option.
 
I agree about that breakfast - 28g according to the packet before you add any milk or anything else.

You'd do far better starting the day with a carb free meal such as eg. bacon & egg, scrambled egg and smoked salmon, Greek yoghurt, plate of mixed sliced deli meats and tomatoes (can have them with any of the cooked eggy things too, and cooked mushrooms - all virtually carb free.) No time to cook in a morning? Hardboil some eggs and keep em in their shells in the fridge - one or two with a goodly dollop of full fat mayonnaise. Lump of cheese. Shedloads of different possibilities you haven't thought of.

Protein actually keeps you feeling full for hours and hours longer than does carbohydrate! Always has and always will - assuming you're a human being, that is ! 🙂
 
Treats in moderation or made deliberately low carb are fine, as is a little alcohol, and I have coffee with cream almost every day.
As already mentioned - you are eating high carb foods, the breakfast cereal and two slices of bread would be way more carbs than I'd ever contemplate eating in one day. You don't need to use skimmed milk - it has the fat, which you can cope with removed and the lactose, which is a carb, left in.
I buy Greek yoghurt, full fat, from Lidl, as it is low carb. I make salads with a pack of prepared salad, celery, cucumber a tomato and a beetroot, to eat with meat fish, seafood or eggs and cheese. It is far more nutritious, colourful and tasty than grain based foods which have to be supplemented in the factory to try to make them less dismal as a choice of food.

2 Weetabix are 26g carbs. You’ll see that on the box as it has the serving size as 2 biscuits. They soak up quite a lot of milk so you probably had at least 150ml skimmed milk, which is 7.5g, plus your blueberries and yoghurt spoonful, so more like 40g carbs. As breakfast is usually the time when we’re most resistant to insulin, you’d find a breakfast like plain Greek yoghurt with blueberries and nuts and seeds better probably.

Your toast lunch was all carbs and you’d have been better off with some salad and protein with a small amount of carbs.
 
Hi Anne. It's so frustrating getting your food right and feeling like what ever you do you can't get it right.
I've been type 2 for just over a year now did really well got back into normal figures got cocky and I'm starting again.
The best book for me to count carbs is carb and calorie counter by Chris cheyette it shows portion sizes .
As everyone on here will tell you it's not a race and we're all different.
