Relationship to Diabetes

I am attending a pre Diabetic clinic at our local surgery. 4 weeks, and then monthly. It's been very informative. However, I'm watching Carbs and have absolutely no added sugar. But, I'm getting a bit light headed about an hour before meals. I wonder if I'm eating enough.But what else is there. We are vegetarian and cook for 4 people. I don't want a special meal if I can help it. I have half the amount of Pasta, Rice, Couscous etc than anyone else. Usually a out half a measuring cup. Any advice or ideas, please.
 
Nuts would be a good thing to snack on if/when you are feeling a bit light headed/wobbly or olives if you like them or veggie sticks and dips... hummus (go steady as it does contain carbs, but a little each day with crudités should be ok) or cream cheese and chive or salsa.
 
You are probably in the worst position, eating enough carbs to trigger an insulin response, which eventually takes full effect before you eat again.
Could you add a little more fat to your meals? That might delay the response to it long enough to get you to the next meal.
