Relationship to Diabetes

5 years ago today I got my official diagnosis of being diabetic.
I had just lost 7 stone in weight (which I done following weight watchers for 2 years) and I had never felt better. I was feeling healthier and happier than I had for many years. I'd decided to lose weight as I knew diabetes ran in my family (father's side).
I went along to a health fair at my workplace and they done a finger prick test and mine came back at 27.6!!!! I think the nurse almost fell off her chair!!! She almost sent me to A&E. Instead she gave me a letter and told me to make an urgent GP appointment.
Appointment made for blood tests the following day.
A couple of days later I got called to come and see the GP. That's when they told me my hba1c was 127!!!
Put straight on Metformin and sent home with an appointment with the nurse the following week.
5 years on I'm still here, on 3 different tablets for my diabetes now, still struggling to get my morning levels anywhere near normal.
But I'm still smiling!!!

Irony oh Irony I was diagnosed in June and a month later my great nephew got a job at the bakery that make Eccles Cakes 😱

Any treats today, or just an extension to the birthday celebrations?
I bought a pack of 2 eccles cakes from work. One for my birthday and one for my diaversary!
 
Let's just think about this ...... dried currants, mixed peel, muscovado sugar and a few carb free ingredients for the filling, then pastry, thickly sprinkled with granulated sugar before baking - so ideal for any diabetic to encompass within their everyday diet ......

The BBC recipe told me there was 88g carb in every 100g of cake, hence compared to the sugar on it's own, it is lower carb ......

That's why it's my once a year birthday and following day diaversary treat!
 
Make the pastry with sunflower seed flour, replace the sugar with Swerve or golden monkfruit sweetener, include loads of butter.... cut back on the raisins and peel... and it’ll be nothing like an Eccles cake!

Sorry to be so late wishing you a happy diaversary @Stitch147 . You have come a long way and lost a huge amount of weight. Well done you and keep at it (as we all are lol) x
 
Well we all have two simple choices really @SueEK - either keep at it or die sooner! (Oooh, think a bloke called Hobson comes into this equation somewhere along the line ...... 😉 )
