Diabetes friendly amazing sauce for steamed vegetables

Hi everyone,

I just wanted to share with you a very versatile and tasty recipe of a sauce/dressing. It will go well with any steamed vegetables like...broccoli, cauliflower, carrots, beans, kale..even boiled eggs. And hopefully due to presence of peanut butter and vegetables will help with blood sugar control.

It’s very popular in Indonesia and my Indonesian friend kindly shared it with me.

Ingredients:
2 large tomatoes, 1 clove garlic, 2 heaped tablespoons peanut butter, salt to taste, green/red chilli (can omit if do not like spicy).
Blend all of these in a paste. Store refrigerated for up to 2 days.

Pour over your vegetables, can add (optionally) few teaspoons of roasted peanuts and enjoy.
