I've just made chaffles from the recipe given out in David Unwin's article in today's Daily Mail. And they worked out well. They were more solid/more carby than other recipes I've tried, and satisfied that need for carbs. I did use mozzarella, which gave them a less cheesy taste. I had one of them after my main meal of chicken thighs done in my air fryer and steamed broccoli and sliced green beans. But what to put on the chaffle? I settled on thick butter and a generous teaspoonful of St Dalfour Strawberry Jam. Yummy, but the jam, though there's no added sugar, is high in carbs, and I wondered if there are any recipes out there for low carb jams? Perhaps using blueberries, strawberries, raspberries, and sweeteners? I'm thinking of just a small amount of jam, something I can whip up in a few minutes and perhaps store in the fridge for a few days.

You can use any berries and whichever sweetener you prefer.
This one is a picture of a jar of blackberry jam I made.

I don't make whole jars any more because I don't use that much jam. I just take a few frozen berries from the freezer, zap them in the microwave until they mush up and then I stir in a teaspoon of chia seeds and a pinch of sweetener or a drop of liquid sweetener and then use it as I go along.

I have to admit to having started to buy Stute marmalade from Tesco. It is very low sugar and marketed as being suitable for diabetics and I haven't found a good/easy way to make my own marmalade yet. They do a strawberry jam as well. I have bought one jar to see what it is like but I haven't opened it yet.
 
NotWorriedAtAll: Thank you for the jam recipe. The finished results of your jam look really good. It's exactly what I've been looking for.
