‘Damn diet food’ I thought, contemplating my lamb shank with carrots, broccoli and cauliflower cheese….absolutely delicious it was, too.

My eating habits have changed after a T2 diagnosis and a talk with my GP. The idea of losing weight has changed from ‘should do that sometime’ to ‘must do that now’.

I’m a couple of weeks in to forsaking carbs and have been surprised at how easy I find it. So long as I’m cooking for myself. I’m definitely eating more vegetables - and a wider variety - than I ever have before. On the flip side, I’m amazed to realise if ever I’m in a café (Edinburgh has a lot of cafés) just how much of our eating habits revolve around carbs. Whether it’s chips or sandwiches or cakes - the carbs are pushed at you all the time. Oh, and I do like a nice scone…but the willpower is strong!
 
Sounds like you are really embracing your new low carb way of eating and not surprising! Can I come to tea next time you are doing lamb shanks please? Such a hardship! 🙄
You are right though eating out is more challenging. Carbs are relatively cheap so places can make very reasonably priced platefuls of food and still make a profit.
 
Frequent visitor to Edinburgh, any half decent cafe will do you a omelette if you ask, if you don't like eggs then maybe a salad.

When away we often eat in Wetherspoons, my fav spoons is in Edinburgh called The Caley Picture House, if you've been in it @WillyG then you'll know why, beautiful building inside tastefully restored.

Another fav of ours is McKirdys steakhouse, do fab mix grill in there which is a gut buster.
 
I had lamb shanks last week, with broccoli, carrots and cauli. Slow cooked in mint gravy..........beautiful :D

I know what you mean about eating out though. I frequent a particular pub for tea out and they do amazing salads so that suits me perfectly but Sunday lunch with my niece a couple of weeks ago was fun. I had hunter's chicken but asked for the chips to be replaced with veg. I figured this would be easy, given it was Sunday and the pub also did a carvery. Hmmmm I got the hunter's chicken but with two tiny florets of broccoli. That was it!! I think they get a bit stumped when changes are requested, even simple ones.

The lamb shank was ready made by that nice Mr Lidl. Took 5 min in the microwave….
 
Ah! There was me thinking you were displaying some impressive culinary skills. 😉

Unfortunately I refuse to buy those (nice as they are) because they are New Zealand lamb and I don't think it makes environmental sense to import meat that we can and do produce here in the UK, half way around the world. I also believe we should support our local farmers, who have it pretty tough. I live rurally and from farming stock, so am perhaps more aware of the issues.

Just my personal opinion, so don't let it discourage you though.

I love this. I am in patient participation group and think that if I were type 2 not type 1, I'd love to be offered the choice between those 800kcal shakes and a real food low carb approach with no meds involved. So am glad to hear your GP has changed you. With you on the scones but as I wear a continuous glucose monitor I can see the epic heights it shoots up the blood glucose levels so stay strong and look after your recovering pancreas!
