I know I should know this ,but I don't, well I think I do ......if I inject a dose of insulin to carb ratio, 2 hrs later if my bg is back on track ie what it was pre meal... has the extra insulin been used up so if I'm hungry can i inject and eat again ? ( I would air on the side of caution anyway ie under dose insulin/ carb ratio) ideas please ??

If you're using a typical mealtime insulin, the usual duration is 4-5 hours, although it will be tailing off by this time. This is fixed. If you've come back to normal range after two hours, it doesn't mean the insulin has been used up, it just means that the first two hours of its activity has dealt with all the carb you ate. If you don't eat again, you risk going low.
If you're hungry and want to eat more than the amount that your remaining insulin in board will mop up, then you'll need to inject some more, but as you say, be cautious, 'stacking' insulin can lead to hypos if you don't calculate it carefully. Remember that insulin already on board, and allow for the fact that it is going to be dealing with some of the carbs you're about to eat.
 
Agree with what @Robin has said - if I am back to my pre-meal level after 2 hours I know I will need a snack because I'l still have around 3 hours of the insulin still tailing off. This actually works for me, as I always fancy a snack a couple of hours after lunch! 🙂
