We’ve had the whole family working on this. I reckon it’s a reference to the Holly and the Ivy carol chorus,.'The holly bears the crown'
 
I spent a good 10 mins on it and gave up I am afraid, but I'm well impressed with your puzzle solving @Robin
 
Yes. When I was little and was first learning the words to carols, I used to wonder who the Holly Bears were. This carol actually has Pagan origins, Christian themed lyrics were added later and the original words have been lost. Because there are only two lines of melody you really need a good choir and an imaginative arrangement with lots of different harmonies so it doesn't sound too repetitive.
