Cutting back on my Carbs , replacements etc

I know that in general I will be cutting way back on takeaways , curries , fish and chips etc and eating less red meat and more chicken and fish ......that's going to be a winner

What about bread rolls , that I love with chunky soups ? And bread bread in general ? Can I get diabetic bread etc ?

Potatoes are a big part of my veggie stews and soups .....what vegetables are ok for our lot ? I understand parsnips are high in carbs , whilst swede is not ?

I have just read your other thread so some of the comments are a bit redundant as I read the 'AT RISK'
Welcome. You already have a few good ideas about what not to have or to cut back on. Bread is difficult as some people can manage a small amount of bread but others can't but there are some lower carb breads available, Burgen soy and linseed, Livlife and a Hovis seeded bread.
Soups are good choices but generally better not to put potatoes in them especially if you have bread at the same meal.
Butternut squash is a good alternative to potato.
All meat is OK but limit the amount of 'processed' meats, even high meat content sausages are fine.

What your HbA1C is will give an indication of how much work you need to do, so you say at risk so I assume between 42 and 47mmol/mol then portion reduction and cutting a few higher carb foods may be sufficient.
It is better to reduce your carb intake gradually to avoid issues with eyes and nerves which some people can get.

Dr has put me on metformin
 
Whys that
a reading of 80 and a prescription of metformin = type 2 diabetes.

Type 2 is diagnosed when the reading is above 45. Prediabetes is between 42 - 46

As for the diet questions:

you can buy a bread machine and make your own very nice bread that will not spike your blood sugars but you will need to buy a few ingredients you won't have heard of before - the Keto King Best Ever Bread Machine Bread recipe is a great one to start with and you can find it on YouTube.

Anything a potato can do - celeriac can do as well if not better. You can get celeriac from Tesco - I get one every week. Just peel it and treat it the same way as a spud and job done but with a very small fraction of the carbs. To make it taste more like mash when you want mash, boil it with some cauliflower and mash them together and the combination once you've mixed in butter and parsley and a bit of garlic will be as close to mashed spuds as makes no difference.

You can make chips with celeriac and it thickens soup beautifully. You can also use cauliflower to do that perfectly well too but I find I need to use a stick blender to get it to make a nice thick hearty soup.

I was told by the first gp who gave me my results he was unsure if I had type 2 , the second one I phoned in a stress time said get on the medication pronto and has referred me to the DN

Celeriac sounds fab !

Just a few pictures of some of my every day food. Celeriac crisps, my March the 1st Cawl, one day's steak and celerac chips and battered leek (the leek has some carbs but the batter has none if you use Pulsin Pea Protein mixed with egg - another ingredient you can get from Tesco) and a different day's steak with celeriac this time in French Fry style.

I keep my carbs to lower than 20g per day and eat like this and have no trouble keeping my levels of sugar, cholesterol, blood pressure at normal readings where at diagnoses they were all too high. I no longer need meds either. You can cope with this with a bit of ingenuity, creativity and some very simple maths.

For now take your meds and make some changes and see how it goes.
