Nothing like a good curry. Wife makes great curries. Natually low carb. Will have with a home made chipati & brown basmati. Yum!:D

can you write the recipe down, a low carb curry has been on my mind all day 🙂

Ok. Curry recipe. Sort of.
Make paste with
Onion
Chilli
3 big cloves garlic
Thumb size piece of ginger
2 tomatoes
Handful fresh coriander
1 tbsp garam masala
Tsp coriander seeds
Tsp fenugreek
Tsp mustard seeds
Tsp cumin
1 tbsp curry powder
Some black peppercorns

Fry off diced chicken with a diced onion & peppers. Add paste when chicken is partly cooked. Pour over half a large pot of Greek yoghurt. Stir all in, put lid on & simmer for 45 mins. Take lid off to reduce for about 10 mins. When nearly ready, throw in extra coriander & spinach leaves (optional).

I also do love a curry, though it has been rare since diagnosis.

I had a lamb rogan josh (wetherspoons), with the yellow rice (pilau?), 4 poppadoms and mango chutney, along with 2 beers, and I found 2 hours after food I was at 5.2. Also a few weeks earlier, had a Salmon Tawa, which was very nice, with basmati from a takeaway, and that also didn't spike my levels, so curry definitely works for me, at least those I've tried so far.

Still trying to get into the cooking from scratch thing. One day, time will be on my side. And I will laugh, laugh like the gods of old.
 
I find I'm ok with rice. Even white rice doesnt do my bloods too much damage. I was 4.4 before curry & 6.5 2 hours after, though meter tried to trick me with a cheeky 7.5, so retested.:D
 
Just noticed in the recipe I put 2 dessert spoons. Technically that is 1 tbsp. So I've changed it. We don't own any tablespoons.:D
