Yesterday my mum wasn't feeling too well, so I said I'd cook. We had some chicken pies in the freezer so I was going to do those with roast potatoes and broccoli, WHEEEEN! I saw the hand blender! Sooooo, I decided to make a soup!
Thought I'd share it with you all, it was rather nice!
I don't know recipe speak so I've just written it as I did it lol..
Chop one onion and fry in olive oil with a sprinkle of curry powder. Leave until needed..
Peel and chop 5 small/medium potatoes and boil until soft.
Boil broccoli
Add everything together in one big pan with three cups of chicken stock, (We use the stock cubes where you disolve in boiled water..), blend together until smooth, add 100ml of single cream, another sprinkle of curry powder, some basil, garlic, and parsley, and blend again!
I don't add salt to anything, but I suppose that's down to personal preference.
