What people might eat will depend on a number of factors, how they are managing their condition and what medication they are on and will be very individual.
Are you on insulin as that will be the thing which will determine what you need to eat and the amount of carbs.
If not then you will need to keep your carb intake at a level which your body can tolerate.
Are you monitoring your blood glucose?

Yes I am monitoring my glucose 4 times per day , as I only started insulin on Monday . I am on Lantus SoloStar insulin glARGine.

Ok, if you only started insulin on Monday, it could well be that your Lantus dose will be gradually increased as people are started on less than they’ll probably need for safety reasons.

I suggest you eat what you were eating before to begin with, as the Lantus will have been prescribed bearing in mind your blood sugar then. You’ll also need to get hypo treatments in and keep them with you in case your blood sugar goes to low - ie Dextro glucose tablets, jelly babies, etc.

What were your blood sugars before you were prescribed the Lantus?

As I am not medicated and eat really low carb to control type 2 a typical meal - as eaten last night - would be roast chicken, as much as I like, mushrooms, as many as I wanted and a small portion of peas followed by sugar free jelly, mixed berries (Lidl frozen 4 berry mix) and cream.
Users of insulin are encouraged to use it to enable them to 'eat normally' - but on high carb I put on weight, so the low carb way of eating is my normal. For carb counting, I made a notebook of low carb foods I eat along with their carb content as a percentage, then I used some electronic kitchen scales so I could measure out the weight of the food I added to my plate until I could make a good guess without them. These days, to judge by my fairly stable test results, I have learned to get the right amount of carbs and do it automatically.

No, they’re not. Type 1s can eat normally and are encouraged to do so, but Type 2s on insulin can eat an appropriate diet for them and their weight, insulin resistance, etc

Hi Inka my blood sugar was 12.5 on Monday 4pm then at 10pm it was 24.2 this lunchtime it was 10.5 after a no carb breakfast

That makes sense @Carolmch I expect your dose will be gradually increased until your blood sugars are in the appropriate range for you. Are you having a follow-up appointment/call?

If you keep notes of your blood sugar results and what you eat for each meal, that should help get your insulin dose right. If you’re able to read the carbs of the packet, that will help too, eg if you have a sandwich, list it as two slices of bread (15g per slice - or whatever), chicken, lettuce: Total carbs 30g (your two slices of bread).
