I was diagnosed 2 weeks ago, 500g metformin daily
I can't seem to get any consistency in my test readings - had my main meal at lunchtime today and readings shot up from 5 to 12 even though I had only 63g carbs
Does this mean I need to cut back on carbs even more? But this would go against what diabetes nurse told me. Or is it just taking time to adkust?

How long after eating was it 12?

If it was 2 hours then 12 is quite high and does indicate you might need to cut back on the carbs.

How long did it stay elevated?

What did your diabetic nurse tell you?
 
Metformin is still at quite a low dose and will take a bit of time to have much effect and it will be your diet that will have most impact. 63g carb in any one meal is quite a lot so I'm not surprised it raised blood glucose by so much, 2-3mmol/l after 2 hours is what you should be aiming at so it does suggest that was too high a carb meal for you to tolerate. Before meal reading was within the range you want.
The suggested amount of carbs per day is no more than 130g divided evenly between meals, smacks and drinks so 63g for just one meal is a large proportion of that.

But it was my main meal, breakfast was eggs and cheese and lighter evening meal was smoked salmon. Carbs for the day fewer than 130g, so how far is it safe to go down to?

It is something that people really need to find out by testing as to what they might be able to tolerate at each meal. What you had may have just pushed it too far so you could try a similar meal but with reduced portion size of the high carb component and see what is is then.
I personally only have about 70g carb per day so appox 15-20 for breakfast, same for lunch and 25g is for dinner and the rest for drinks, I tend not to have snacks. But I determined that by testing.

Looking on your other threads, your initial hba1c was 98 which is quite high.

Mine was 83 and I eat less than 50g of carbs a day to keep BG < 8.5 two hours after meals.

Can you replace the carbs with something else? (I use cauliflower rice instead of rice, and tend to have vegetables with meat or fish.) I would suggest making a replacement or reducing portion size and testing until you get to a good figure.

Being at 5 beforehand is good, though, so you're heading in the right direction!
