A single biscuit has 1g of sugar. A single portion of Passata has 7g of sugar. The biscuit is amber and the Passata is green. I’m confused. How can the Passata have so much more sugar by grams but be green on sugar?

Ignore the traffic lights. What you need to look at is the nutrition panel, as that's where the carbohydrate info is. The carb content is expressed per 100g and sometimes also per portion. Your body turns all carbohydrates into glucose so it's the carb info that matters, not the 'of which sugars'.

For anybody who is diabetic the traffic light system is as much use as a chocolate teapot. It only looks at the sugar content not the carbohydrate which is what is important whether you are managing blood glucose by diet or needing to know the carbs to work out insulin doses.
Compare the difference of those two items if you look at the carbohydrate information on the back of the packet or jar.
