At the weekend had a nostalgic wish for the long ago ‘pre-diabetes diagnosis’ days when often on a Saturday evening we would enjoy an over large Chinese take-away. Thinking back at what we had I dread to think what the total carb value would have been!

So thought I would have a go at putting together a Low-carb version, and this is what we ended up with:

Chrispy Duck with lettuce ‘pancakes’
(Roasted and shredded duck breast, a sauce made with tomato/chilli/soy/garlic, strips of spring onion and large cos lettuce leaves to make wraps)

Prawns in black-bean sauce
(Prawns with black-eyed beans and various spices and flavourings to make a sauce)

Egg-fried Cauli-rice
(Cauli-rice fried with pak choy, chicory and few peas, and beaten egg added. )

With a glass or so of white wine it was very tasty and enjoyable.
Rough calculation was about 50g carbs – a bit higher than my normal evening meal size – but it was good!
 
How tasty does that sound, can I place an order for 2 people please. 😛 😛😛😛

I've had a go at making grated cauliflower rice, it came out very nicely and was certainly a lot less carbs when compared with rice.
When paired with a single portion of m&s veg curry and some fresh prawns cooked in butter and garlic it was a great meal for 2.
Each meal portion was about 15G carbs.
I prefer my cauli to be plain save for a squirt of lemon so as to not clash with the spicy food and get the contrast but you can add some light spices to the cauli if say there was no curry sauce and/or the meat was cooked plainly.

That sounds really delicious Toucan. A few seconds thinking it through and we can make some brilliant dishes to satisfy our cravings.
