Everyone's probably got their own recipe for this classic, here's my version! I make it up in a big pan, eat one portion, then let it cool and freeze the remaining portions. Freezing and then 'nuking' the portions actually improves the texture as the ice-crystals break down the fibre and thicken the sauce. It also means that I have 'instant' meals with no extra preparation and very little cooking, and at a fraction of the cost of 'shop bought' versions.

Makes about 8 'Northerner' size portions - i.e. quite large!

Ingredients:

500 gm lean minced beef
Tablespoon vegetable oil
2 cans chopped tomatoes
Can red kidney beans
Can of sweetcorn
2 large onions
Large red pepper
2 oxo cubes
heaped teaspoon of marmite
4-5 teaspoons hot chilli powder
2 teaspoons red chilli (I use that 'Lazy Chilli' stuff that's in a jar, rather than fresh chillies)

Heat the mince in a large pan until the excess fat has melted. Drain this off and chuck it away - makes the mince even leaner!

Chop the onions and red pepper and fry in the vegetable oil.
Add the mince back into the pan and stir
Stir in the tinned tomatoes
Add the (drained) kidney beans and stir
Crumble in the oxo cubes and add the marmite
Add the chilli powder and red chilli. **Warning** this will be very hot, as I like food that burns my lips before it touches them🙂 So reduce the amount of powder or leave out the red chilli if you like the taste but not the heat.
Stir and add the sweetcorn.
Simmer for 1 to 1.5 hours.
Serve with pitta bread or basmati rice

Looks very tasty Northerner. I usually add a square of grated cadbury's dairy milk chocolate about 5 mins before serving - gives the chilli a really smooth texture. Although I might try marmite next time....🙂

i also add a tin of beans to my chilli.
 
I also like Chilli con carne. Quick, cheap and fairly healthy. Mum likes it too as it means she doesn't have to cook for me. 😛

How long?! 😱 I put everything in save the kidney beans and leave it to simmer for 10 mins then add the kidney beans, nuke the rice and then eat.

I find that it improves the texture and flavour if I leave it to 'brew' for a while - otherwise it turns out a bit watery.

I quite like wet foods so I don't leave it as long. 🙂
