Relationship to Diabetes
Type 1
my mates Mrs gave me this

1 tsp chopped ginger
1 large clove garlic crushed
1/2 tsp coriander
1/2 tsp cumin
1 tsp chilli powder
1 tsp salt
2 tbsp lemon juice
1 tbsp tom puree
1 onion sliced
1 kg chicken breast
2 tbsp olive oil
3 tbsp yogurt

blend the ginger, garlic, coriander, cumin and chilli in a mixing bowl

add the salt, lemon juice and tom puree

cut the chicken in to 1 inch cubes and add to the mixture, mix and leave for a min of 3 hours.

put the onions on the bottom of an oven proof dish, splash the oil over the onions, cover with the chicken and mixture, cover with tin foil an bake for 30 mins, remove foil and grill until browned all over.
 
That sounds lovely, only on my renal diet I would have to cut out the salt and I am not allowed tomato puree. I am only allowed tinned tomatoes, do you think that would ruin the recipe ?....TinTin

How about unsweetened tomato sauce?.....or a can of tomatoes reduced right down to get the same consistency?
 
Mmm that sounds lovely Megga .Im not the best cook but im good at curry as theyre usually pretty easy and its hard to go too wrong :D

Unsweetened tomato sauce no good, but reducing a can right down would be fine. Renal diet quite difficult, not allowed any fruit unless it is drained out of a can. Vegetables have to be soaked overnight before you cook them. Potatoes have to be soaked, rinsed, cooked and rinsed again !!, it is to do with the pottasium and phosphate in them. Not allowed to eat loads of things....TinTin

Most of the things i cook, i just adapt to either what i like/don't like, or what i have in, so Tintin, just try it, and if it turns out, put a post so others can have a go.
