Chicken, Cheese , Tomato & Basil

Hi Folk made this yesterday, thought I’d share it

Ingridients:

250g mini chicken breasts

1 tin chopped tomato’s

1 tbs tomato puree

Bunch of Basil

1 medium onion

1 clove garlic

Glug of olive oil

1 bag spinach

200g grated mozzarella

200g grated 4 cheese mix (tesco)

200g cauliflower rice

Small glass of red wine

Method:

Steam the chicken, when cooked cut into bite size pieces

Soften onions in the oil, then add garlic, add tin tomato’s, puree, red wine and basil.

While this reduces put cauliflower rice in the bottom of an oven proof dish press it down firmly with the back of a spoon, put in oven 180 for 20 mins.

Steam the spinach.

Now we should be ready to assemble:

Put the mozzarella on top of the cauliflower, then the chicken, cover with the sauce, next a layer of spinach, top off with the four cheese mix.

Now back in the oven for 10 minutes to melt the cheese. I had a ¼ of this and worked it out as about 12 carbs.

Snap me too, just put in in the oven, and I've done a version of marks Lime cheesecake, except this one is vanilla. Wife is coming home to a two course meal ready to go the moment she walks in. Loads of brownie points for me..
 
I'd like to lnow how you've made a vanilla version as I've never seen vanilla flavoured jelly.:D Did you use gelatin?
 
I followed recipe for base, then put 300ml double cream on low heat 4 sheets gelatine, 1 tsp vanilla extract. Topped one square lindt and toasted almond flakes

Tuna roll for me tonight - I am feeling a bit deprived :(
 
Cheesecake was good but needs some more work, not as firmly set as the Lime one = More gelatine however it is ok, holds together. Needs more vanilla either an extra tsp of extract or a fresh vanilla pod I think. and maybe some sweetener just to take off the sour notes from the cheese.
 
Try vanilla paste- not as liquid so won't compromise the jelly.

What cheese did you use? Try fromage frais instead.
