I made this last night. Was yummytastic & hopefully fairly healthy.
For 2 people
4 Chicken Thighs, remove skin, trim fat & remove bone
2 carrots
1 jumbo leek or 2 normal size ones
Small red onion
4 biggish mushrooms
5 new potatoes
Bay leaf
Star Anise
veg stock cube
2 mugs of water
Seal the chicken in a saucepan and once its white on the outside remove. In a smidge of oil put the carrots, leek, onion, potatoes and cook off for about 5 mins, stirring so nothing burns. Chuck in the mushrooms, stock cube, bay leaf & star anise (you can use herbs if you dont have them in your cupboard, any will do, its all personal taste), stir about for a couple of mins.
Put the chicken things in a casserole dish so they are around the sides, tip the veggies n everything from the saucepan in with it. Pour a cup of water in the saucepan, wash around then pour into your casserole so you get all the tastyness out the pan. Top up casserole dish with the other cup of water.
Pop in a preheated oven at 160 for 1 hour, then up the heat to 200 for another 45 mins. makes the chicken really tender & falling apart and the veggies too.
Hopefully my recipe style makes sense to people, i just make it up as I go along & possibly dont explain too well but this one is easy peasy so hopefully not too confusing 🙂
