I have just made this for our lunch - I had forgotten about it. We love it hot or cold. For lunch we are having it with green beans.

I usually leave out the mayo as it adds nothing to the recipe and I use 4 eggs.

Cheeseburger Pie
Total Carbs 9. Serves 4

Ingredients

500g mince beef
50g finely chopped onion
150g chopped mushrooms
100mls of double cream
2 heaped tablespoons of mayo
150g strong cheddar grated
3 eggs
Salt and pepper to taste.

Method
Fry mince, onion and mushrooms together until cooked. Season to taste, drain off fat, add lee & perrins sauce if so desired. Place in a greased foil covered deep pie dish, flatten with a spoon

Beat eggs. Add mayo, cream and cheese. Pour over the top of the mince, drop olives around the dish and bake in oven Gas mark 5 or elect. 180c or 350f for 20 to 25 mins until set and golden brown.

Leave to cool before taking out of the pie dish, remove foil. Cut into portions and wrap in cling film. This freezes very well.

Lovely with salad, cauli mash, or stir fry (great for lunchboxes).

It was lush Annette - will be equally as lush with a salad for lunch tomorrow :D

Its great as a packed lunch as well. As far as I know it can be frozen but with 2 of eating it I have never had enough left to freeze 🙄

Just made this lynn but used turkey mince. Really yummy and a wee bit was really filling
 
Might have to give this one a try.

Tried this last night. Even hubby, who can be pretty picky at times, commented on how nice it was. One to add to my list :D
