Roast shoulder of lamb - mega fat. (You're sposed to steam roast shoulder on a rack above a roasting pan with an inch of water in it, to get rid of the excess fat into the water - but being as we liked it crispy I never knew that until a butcher mate told me!)

Duck breasts, skin on - cook in a dry frying pan skin side down so the fat and the pan heat up together until skin is crispy (4-5 mins) and all tha fat under the skin comes out, then turn em over so the other side cooks in its own fat for another 4-5 mins. Take em out drain and keep warm. Serve with veg of choice.

Pour the remaining fat into a container and give it away to anyone who likes cooking roast potatoes!

thanks!
I will try duck breast, but as for lamb shoulder, I will get some steaks instead of the whole shoulder! I only cook for me

You don't have to eat it all the same day you know! LOL

Surely duck breasts are expensive?
If you buy pork or beef mince you can make your own burgers\meatballs. Also I buy gammon roasting joint from aldi, under three quid! Pork steaks are filling and cheap. Asda currently doing 3 packs of meat for a tenner, portion them out and freeze. Its cheaper to buy in bulk.
