have always made this soup but have used double cream in the recipie but imagine this is not a good idea anymore with type2 anyone got any suggestions thanks
 
Personally i don't see any problem with adding double cream to the recipe. I make it without but am prone to putting a big dollop of creme fraiche in it just before scoffing.

PS.... its the carbs I worry about and for me, double cream won't be a problem. What I would not do is to chuck in some potatoes in order to thicken it up a bit.
 
Double cream has less carbs than milk, will provide slow release energy and taste good. What is not to like, unless you have lots of weight to lose?
