Wow celeriac really does keep the Bms down! We made hairy dietes corn beef hash tonight they suggest celeriac instead of potato. I love celeriac so versatile love it in coleslaw. But really tasty in cornbeef hash nicer tan potato bm 5.5 tonight 3 hrs later
I use butternut squash in corned beef hash and add leeks and carrots as well. My first try with celeriac turned out a bit watery.
I have tried to grow some but at the moment they are the size of golf balls, I don't think I'll bother again and just buy some.
 
Ah butternut squash! Another favourite but a devil to cut up. I use it in caribbean curry a lot. But its very verstile.Looking forward to being in Oz for the fruit and veggies. Will be amazing! I have a favourite mango out there its called Honeygold and its golden orange in colour and tastes like its been honeyed. Occasionally I see them here but they sell fast and the stores here don't call them that either. Different sweet potatoes to purple ones less sweet.

Don't want to burst your bubble but mango is one of the highest carb fruits, especially the sweeter ones so you may need to limit your intake or at least check that your body can handle it.
So pleased you had a success with the celeriac. I use it to make chips to have with steak and salad and coleslaw but having it in corned beef hash sounds good too, so may need to try that.
