Cauliflower rice is not that bad!

I thought I’d give cauliflower rice a try and was pleasantly surprised. Easy to make and doesn’t taste too cauliflowery. i made ‘risotto’ with slow roasted garlic tomatoes and vegetarian bacon. Yum! I didn’t feel as if I was missing out.
I'm a big fan, too. I usually have it with a Chilli Con Carne or Chicken Chasseur. Did you make your own? I tried once and made a right mess of it so I now buy the FullGreen one, which takes 2 minutes in the microwave.
 
Agreed its actually quite nice but way, way too much of a faff... for me anyway. Had some brown rice tonight as a result.

I have a Braun chopper and it is brilliant, just cut a cauliflower into pieces and blitz for a couple of minutes then add to a stir fry.

I grated the cauliflower and put in microwave for a few minutes.
 
Thanks to @Urs for starting this thread. I bought my first pack of pre-made cauliflower rice and I’m looking forward to trying it with a home-made curry. Also good to hear about risotto and chilli options. I don’t have a microwave (v small kitchen) so it’s been helpful to hear about other ways to cook it.

I am a "cauliflower detractor". The only way I can eat it is if it has been roasted to give it a nutty flavour. Otherwise, it reminds me of school dinners.
Out of curiosity,I tried cauliflower rice - it took me straight back to my school canteen. Definitely not to my taste.

I guess some people have more sensitive "cauli-dars".

Now broccoli rice ... far more palatable. Unfortunately, the only pre-prepared version I have seen is mixed with "reminiscence of school dinners"

I do love how different we all are 🙂
 
Hi @helli. I have tended to avoid cauliflower as it reminds me of over-boiled veg from my childhood. I’ll give the rice a go and then try roasted cauliflower. I can try making my own broccoli rice…
 
Happy to report that I had cauliflower rice and found like @Urs that it wasn’t too cauliflowery. Phew! This forum is a great way to find out about and try out new healthier foods.
 
Next step cauliflower mash if you haven't tried it. No peeling required, cooks faster than spuds, need to drain it really really well though, then a good dollop of cream cheese and a spoon of mustard if you like it (I use whole grain) and feel free to top with grated cheese. Works great with bangers or gammon or topping a cottage/shepherd's/fish pie. Or you can go half and half with spuds if you like and your BG levels will let you get away with it.

Cauli rice is,about the only low carb substitute i eat now i am no longer doing low carb, cost it tastes nice and is quick.
You could always grate/process a batch and freeze in individual portions

Battered in gram flour and deep fried… (these are amazing)
I’ll even nibble raw!

I quite like it, byu frozen, 3 min in microwave and its done, when smothered with a curry I cant tell it from normal rice. If I go out for a curry I take a pack with me and ask them to heat it up for me, they don't mind.
 
You can buy frozen sachets of cauliflower rice which you simply pop in the microwave and they cook in a few minutes. Much less effort 🙂
I thought a couple of months ago I would buy frozen. However, to be honest unless I smothered it in grated cheese or sauce from my chilli con carne which I love, I just don’t like it I’m afraid. My chiropodist told me yesterday there is a very good pasta which is pea pasta, very heathy so I looked it up. it is indeed very healthy unless you are diabetic it has 55g carbs per 100g. Why oh why can no companies develop foods suitable for diabetics. It makes me so angry and makes life food wise very hard work, and I am sick of it. Look at shelves every fad is catered for as well as for people who have serious food allergies but not for diabetics. Is diabetes a very serious condition, of course it is it affects all of our organs, but we are not catered for.

Yes pea pasta is still high in carbs but look at the black bean or edamame bean pasta as that is much lower carb 15g per 100g I think.

Thanks LL you always come up with good advice, I love pasta so it would be good to have perhaps a weekly fix. I am on the Holland & Barrett site just now as it was recommended also, but there is no shop near me so I will shop online. Just saw endname pasta at only 13g per 100g, will continue looking.
