I don’t measure anything but here’s the general idea.

1 cauliflower, cut into small florets
1 white onion, diced
Chicken stock or veg if preferred, a pint...ish or whatever
Small tattie, peeled and diced ( for thickening)
Double cream, not loads, just enough to make it look creamy and taste luxurious
Loads of cheese, I use cheddar but Stilton is an option ( not for me. Yuk!)

Put cauliflower florets, onions, tatties and seasoning ( go easy on the salt because the cheese you will add later could be salty,) in the hot stock, bring to boil and simmer until cauliflower is soft. I then whazz it all in my food processor but if you like lumps that’s fine, it looks nicer smooth though! If too thick add more stock. Add cream and cheese until melted. Check the seasoning, it can take loads of freshly ground black pepper. Serve with more cheese on the top if you want.
And there you go, the tastiest soup in the world and it’s a meal in its self with hardly any carbs, just the tattie really.
NB NEVER EVER use a red onion, it looks like you’ve soaked one of your black socks in it, not very appetising at all. I know because I’ve done it! 😱

I’ve just made this ready for lunch tomorrow and it smells and tastes amazing. I used some left over danish blue cheese. Can’t wait for tomorrow lunch time!
