Had mash night before last with some lamb stew, half potato half cauliflower, halved my carb intake and was really tasty! 🙂

i use 100% cauli, bit of natural yoghurt to mash in at end (only because I'm on slimming world, would use butter otherwise) and salt and pepper et voila!

I always keep a cauli in my fridge for cauli rice nad mash purposes 🙂
 
Cauli mash was one of the first spud replacements I tried when I discovered what horrendous things the tatties do to my numbers. Between the cauli, sweet potato and mixed carrot/swede mash I now have plenty of options for interesting meals.

I do miss the spuds though. Along with banana, mango and pineapple, they are things I just didn't dare risk while my numbers were so out of control. I may try some small amounts now though and see what happens.
 
I combine the cauli with carrot when I do a cottage pie topping. A sprinkle of low fat cheddar on top, Yum!

I find I can eat one wedge of pineapple without too much mayhem (of course I am T1 which obv helps, but isn't the whole story). It's that labour intensive to get a wedge - I'm happy with that. There are 2 of us so one whole one last us 4 days except we won't have it every day, so call that a week. I only cut off the top and bottom, then split it top to bottom. The half goes cut side down on a plate and gets 2 layers of really tight cling. Then split the open half. One quarter gets just clinged as tight as humanly possible.

The open quarter gets halved top to bottom, then the skin comes off and any woody core chucked. Chunk what's left, half each. Pete probably has a bit of ice cream with his. Sometimes I have a smidge and sometimes not. I've taken to Tesco's Cornish - being fattier it helps with the carbs and it's richer, so like dark choc, less is more.
 
Now I have better control I begin to think I can afford the odd indulgence. So, one of my favourite things is chopped up fresh pineapple, frozen. It's a wonderful alternative to icecream in the summer.... if there is one. It keeps for up to three months and if you freeze the chunks in an ice cube tray, you can just pull them out one at a time. If you have that much self-discipline if course.
