Hi Tim, I just adapted a recipe for muffins from sugarfreelondoners website and added a bit of pineapple essence and a couple of tablespoons of spiced rum.

This is right up my street although I would probably soak raisins in the rum and make them rum and raisin muffins. I appreciate the raisng will be a bit higher carb than the pineapple but then I have insulin. :D
