Just thought I would tell you of a little experiment I have done today.
I am starting to find out that I have to watch the carbs (need lots more tests yet to really confirm this), however, I decided to make a shepherds pie for tea and instead of using all potato, I used 50/50 potato and celariac and I have to say its tastes pretty good.
 
Substituting is a great idea 🙂 A lot of people substitute cauliflower for potato, or you can try sweet potato which is lower GI as it contains a lot of fibre 🙂

I have found that I can eat a reasonable amount of carbs - usually around 150g per day - and control my levels well. If I start having more carb-heavy meals though then it can be more of a problem. Good luck with your experiments - let us know what you find good and what is not so good! 🙂
 
Hi Snowyowl, my cottage pie is in the oven now, with cauliflower mash instead of spud. If ever you want low-carb or low-fat swaps, just post the question. There are workarounds for most things.

Thanks for the info about cauliflower, however, I have to admit to not being a huge fan of the stuff that's why I tried the celariac 🙂
Another recipe is for a desert.
Take 1 sachet of sugar free jelly (strawberry/Raspberry or lemon and lime),
make it up with only half the water then when its cooled a little, mix in a tub of quark cheese and pour into a dish and allow to set. It's quite delicious - word of warning don't use orange jelly - it just doesn't work
