A suggested starting point for reducing carbs is to have no more than 130g per day, it is better if those are split between meals as it is the tolerance to a particular amount of carbs in a meal that doesn't increase blood glucose by a huge amount.
People will decide the amount of carbs they as an individual can cope with by testing their blood glucose before eating and after 2 hours and aim at no more than 3mmol/l increase or no more than 8-8.5mmol/l after those 2 hours. That enables them to cut out any high carb component or reduce their portion size. people aim at 4-7mmol/l before meals.
The more consistently you are within those parameters the more likely your HbA1C will be normal.
Some people will need less carb some may tolerate more but it also depends on what medication if any they are taking.
