Potato salad, pasta salad and croutons will all add extra carbs.

Egg salad (two eggs, hard boiled 160 grams of carbs )

Eggs don't contain carbs, so I am not sure where you got that info from.

Pasta (you can get pouches)
Rice (can also get pouches)
Couscous (can add hot water)
Slice of bread or small roll
Potatoes (some are microwaveable pots or if you slice a potato you can bake it in microwave)
Pudding like a piece of fruit

Pot of potato salad could go with your salad for a few days without needing cooking

Coleslaw would have some carbs

Ops, that should read 1.6 grams
You can’t boil an egg in a microwave though and 1g of carbs isn’t really adding carbs to the salad which is what was asked for?

You could have some hummus or crackers or even have a pudding jelly and ice cream, stewed fruit and custard, chocolate eclairs, custard tart or some fruit but it really depends on how may carbs you need to have in addition to your salad.
Have you been told how many carbs you should be having for the insulin dose you are given.

Why more carbs rather than reduced insulin dosing or reduced meds that are creating more insulin? More carbs is inevitably leading towards weight gain and now weight management. Is your Manager medically qualified in making such a suggestion or looking for an easy life and contributing towards extending your health issues.

The problem is that too much insulin requiring someone to eat more carbs than they currently do in order to prevent hypos, is partly why people put on weight with insulin therapy and similarly with gliclazide. They are eating extra to accommodate an overdose of insulin instead of reducing the insulin doses or gliclazide doses.

Adjusting insulin doses to balance the diet and not diet to balance insulin doses is particularly important with Type 2 where being overweight is often already a key factor in causing the condition.

Erm, according to the carbs and cals book, boiled eggs have zero carbs?

I've recently cooked some lovely poached eggs in a microwave, for my wife, they came out great, simple too.
Boil some water, lightly oil a curved bottomed cup, (NB: any shape cup can be used, but the egg will take the shape of the cup and they just look nicer in a nice curved bottomed or rounded bottom cup).
Pour boiled water into the cup, half fill the cup only.
Crack an egg into the cup.
Place in microwave and cook for one minute.
You don't need the little bit of oil, but it helps to stop the egg sticking to the cup.
Result = perfect poached egg.
If the egg is too runny or too well done, just adjust the cook time by adding or removing 10 seconds, so cook for 50 seconds or 1min 10 seconds, etc so you get the perfect egg, for my wife, one minute was perfect.
Cheers

I tried to tell people that carbs made me feel ill and gain weight for decades - but it was set in stone that they are healthy carbs, and eating low calorie means weight loss.
Not losing weight was taken to mean that you are a bad person, and are not doing it right out of malice and spite.
After spending about 2 months using shakes for low calorie and low carb I am still finding that some things don't add up. I am sure I was still low carb - but they came from semi skimmed milk, the Tesco shakes and small amounts of cooked veges.
Maybe they caused spikes and my usual regime does not.
Successful trials might help indicate what could work - but just because some were successful doesn't seem to guarantee that everyone will be.

Diabetes, as I think we all know can be a very individual thing and what works for one may not work for another, even those in the know are still trying to work out the enigma of diabetes.

I guess we all live in hope that one day the puzzle will be solved, but until that day comes lets all play nicely, be kind to each other and support each other as best we can

Can I just check. Why did your manager say you needed more carbs with your salad? Was it in order to help with balancing your carb intake with your insulin use or for some other reason?
