The Caldesi books are seconded by me.
There are quite a few of them and they were developed by a chef who is diabetic!
 
The Carbs & Calls Book is good reference guide it’s Available through various online sellers plus from Diabetes UK

also another great book is Tom Kerridge’s Dopamine Diet
