Type 1.5 LADA
Although this cake has no fat or sugar, it does contain a lot of fruit, so watch the readings. Your local shop might sell you ripe bananas at a reduced price, wich are fine for this recipe.

No sugar/fat Banana Cake

1lb 3 oz (475 grams) peeled bananas, approx. 5
2 free-range eggs, beaten
4 oz (150g) sultanas
2 oz (50g) another dried fruit - apricots, cranberries, dates
8 oz (200g) wholemeal self-raising flour
1/2 tsp baking powder
1/2 - 1 1/2 tsp cinnamon, nutmeg or favourite spice, according to taste.
Sunflower seeds (optional)

Mix spice with flour and baking powder. In separate bowl, mash bananas, add eggs and dried fruit. Stir then add flour and spice mixture. Place in a lined 2lb loaf or cake tin, sprinkle over sunflower seeds, and bake at 180C, 350F, Gas mark 4 for 1 - 1/4 hours or until skewer comes out clean.

Remove carefully from tin and allow to cool.

You could probably ring the changes by adding a grated carrot or apple instead of some of the banana, although I haven?t tried this yet.
 
This sounds brilliant as I can also cook it for hubby, he can't have things with butter or milk in them...

Must be a nightmare shopping, although supermarkets are getting better at labelling. My hubby is allergic to several types of nut (including me sometimes!) and Sainsburys sent him a booklet with all their nut-free stuff in, on request. You could try asking your supermarket for similar?

Just a thought. this recipe was based (very loosely) on an idea by Rosemary Conley. (I felt justified in posting it because there are many significant changes, including taking out the sugar, and I have tested and adapted a few times - in fact I think the only thing the same is the bananas!) Anyhow, there is another recipe in her book 'Complete hip and thigh diet' involving soaking loads of mixed dried fruit in tea, or fruity tea, which has no dairy stuff in it. Can't copy it here because it would be a direct copy. You could probably get the book from the library or just try googling for dairy-free cake recipes - there's loads for free on the net. Enjoy!

I use sainsburys al lot these days, so I will ask them along with a couple of other local supermarkets (being SUmmerfield, Morrisons and the CO-OP). They all wannt my custom so why not.

my son is allergic to dairy and we asked all our local supermarkets for info on dairy free stuff they stock and we got 2 replies that were good. 1 from sainsburys the other from summerfields. we also asked asda tesco and the co - op but they all sent replies stating that as they carried a huge volume of stock and as it changed on a weekly basis that any info they sent us would be out of date by the time we got it and also all stock in their respective supermarkets carried adequate labeling on all food items as to its contents. was well annoyed at this. but never mind we now only shop in sainsburys or the co - op for our major shopping and use the other if we run out of something.

My hubby automatically gets sent an updated book re nut allergy from sainsbury's every year.

Just waiting for the cake to cook, if only there was smellyvision, it smells yummy. I have used wheat free flour cuz I cant have anything with wheat in so will let you know how it turns out and I have put a grated apple in it as well.🙂

Sorry it's been a while, had a few problems. (I went down to 1.8 at one stage)
The cake turned out yummy. I have since made another one (put 3 bananas in plus apriocots plus walnuts) I used dates in the first one and I must say my friends liked it as well and wanted the recipe.

Whoa, that's really low! Hope everything's OK now? Glad the cakes turned out alright. That's what I like about the recipe, you can adjust it and ring the changes.
 
New cake/cookies - no cook

Hmmm, made the recipe for no-cook cake/cookies from Sainsbury's calendar (June) and am thinking of ways of adapting it so it's slighlty more healthy for us diabetics. Original recipe had choc-chip cookies, crushed, light and dark chocolate, melted, melted Buttery, syrup (I left this out), glace cherries and raisins.

I guess a dark chocolate with maybe a higher ratio of fruit - perhaps dried apricots, dates and cherries or dried cranberries, an olive-based margarine and some oat-based cookies - perhaps even some savory ones (Oatcakes - no sugar) might do the trick - only for high days and holidays you understand!

Any thoughts? Think I'll give the above a go and if it turns out alright, will give you the adapted recipe (can't give you original because of copywrite.) I'll try and work out sugar and carb content too.

Just wanted to say a huge thank you for this recipe. I've made it a couple of times now and it's so easy and best of all my kids love the cake, what a fab way of getting fruit into them without them realising.
 
That's great Alison. I'm just about to try it with rhubarb cooked in apple juice and raisins, instead of the bananas, but got a feeling it will be too soggy - will keep you posted.

Woops - just realised you might have meant the no-cook cake. I did try it with the alternatives - it was nice, but still very high in carbs and I gave up trying to work it all out!

Cake is lovely thanks! Only problem is that A went hypo a couple of hours after it! I did weigh it all out and worked out the carbs etc - 1 x piece was 39grams carbs. I suspect because the fruit takes longer than sugar to digest, it 'missed' the insulin! Will have to experiment again with it tomorrow!😉:DBev
 
Sorry to hear about A dipping - not sure if dried fruits hi or low GI? Perhaps Mojo could help on this one if she's about today?
