Makes 8 buns, or more if smaller.
Ingredients:
180 grams lukewarm water
2 tablespoons olive oil
2 eggs large
400 grams bread flour
25 grams sugar
2 teaspoons salt
15 grams instant yeast
Method:
mix and knead all dough ingredients until dough is smooth (Not the salt)
add salt and knead for 3 minutes
cover and leave to rise until doubled (1-2 hour) (30 degrees, my oven does this on fan)
Knock back and divide into 8 (about 70g) and shape into round ball and flatten to about 3" across. P.S. there is a technique to rolling dough into balls - find out how on Youtube.
Place on parchment-lined baking sheet (5 per sheet), rest for 15 minutes
dust with flour and reform buns, leave to rise for about 1 hour or until tripled in size
Brush with melted butter or egg white and sesame seeds
bake at 190 degrees for 15 minutes.
