Serves 6 My friend gave me this recipe I missed out the dressing (forgot it!!) and the honey. Its very tasty.

1lb of brussels ,
8oz celeriac
8oz quinoa (CUT THIS Amount BACk if you want as high in carbs)
2 fat cloves of garlic
1 roasted red pepper
1 medium onion
1-2cm fresh ginger
1 bay leaf
1 tbsp soya sauce
1 tbsp honey (I missed this out)
1 tbsp amontillado sherry
S&P
1 large wok.

Dressing: 1 lemon or lime juice and zest
1 small chilli
finely chopped
1 tbsp olive oil

mix the dressing ingredients and place in fridge.
Peel and wash the celeriac and the sprouts. Grate the celeriac, thickly slice the sprouts. Roast the red pepper whole and skin them and slice.
Grate the ginger and skin and crush the garlic . Make up the quinoa as specified on the packet.

chop and saute onion with a little oil until softened. add the bayleaf, garlic, and ginger. Add a dash more olive oil and quickly add the grated celeriac, brussels and red pepper. Stir well and cook for a couple of minutes. Stir in the soya sauce , honey and sherry. add he quinoa and mix well.
The dressing drizzle over as required.
 
Do Brussel Sprouts and Metformin co-exist?
