Hi I bake a lot of my own bread, find it very relaxing. I have been try get my head round want is the best recipes to use has any one got any ideas on this subject, been trying not use to much white flour is that the right thing to do.

Spelt flour seems to be the pick of the folurs from a GI point of view, if you look in the food bit of the site you may find much of the information you are after

Spelt does give quite a dense loaf though (similar to rye in its behaviour).

I cheat when it comes to bread making. I have one of those 'infernal' machines. It never ceases to amaze me how the collection of ingredients in the pan become a lovely loaf with a hole in the bottom where the mixing paddle is!

Anyway, my favourite loaf is a seeded granary:

3/4 tsp dried yeast
400g granary flour
1 tsp sugar
15g butter (or margarine)
1 tsp salt
280ml water
25g sunflower seeds
25g pumpkin seeds
1 dessert spoon malt extract (I lurrrrve malt extract!)

The last three ingredients are my own addition.

Do you have a bread maker? Sometimes they come with a cookery book. There are also loads of books on bread making, it may pay you to see if they have any in your local library before you buy any.
