Make start up brew Fresh yeast, in 400 ml water, add 2 tea spoon salt (2 sounds a lot but the bread seems to taste much better with 2 spoons ? more does not help) a tea spoon of sugar, 2 table spoons of olive oil, this goes in the bottom of the mixing bowl and let to fizz
If dry yeast allow longer to work
At this point I start the mixer and put in about 300 g of the flour and leave to mix for 10 minutes
Then leave the mixer going and add
Add in a table spoon each of Nuts -- Bran -- oats -- I love walnuts but use anything in the kitchen,
I leave to mix for 5 minutes then add the rest of the flour -- mix for 10 minutes, If it seems to dry I will add a bit more water and carry on mixing -- if to wet I add more oats,
Remove from mixer and leave to stand, I have taken to knocking it back twice,
Then into a tin and bake

Hot oven for about 30 to 35 minutes -- take it out of the tin ? tap the bottom if it sounds hollow it is done if it does not sound right I put it back in the oven on the cooling rack not in the tin

(open the windows and leave the room or I will happily eat to much fresh bread no butter marg or anything just the bread)

Hi Andrew, what kind of flour is it please, and what amounts?

Do you know the carb count? Sounds delicious.

Spelt flour

Hi I. have been getting 'Doves farm Spelt flour' of late, but I tend to go into a supermarket and grab which ever is in stock, I found a bakers in Chiswick by accident which use spelt flour in everything, love the products can not afford to pay for it. 4.00 for a loaf,

Carb count

Sorry no idea I just limit my self to 2 slaces at a time - and make sure I do not cut a door step, well to often when it is fresh it is possible to eat the whole loaf -- so cut 2 slices and put the rest away --- quick -- fresh the smell!!!!!!! Help.

Amount

Hi

Sorry I have just realised that part of the listing is missing

I get a 1kg bag of flour and split it in 2 x 500g lots and use them to make 2 loafs.
