Inspired by @Vince_UK 's cheese scones...I added cheese to the basic bran bread recipe I use for bread & burger buns...150gs of mature cheddar...they taste delicious...since I have added more bulk to the mix I've had to increase the liquid content...so I've posted the recipe incorporating those changes for any who want to try it...who'd have thought @Vince_UK The Baker😉

Cheese burger buns & scones adapting the basic bran bread recipe

Ingredients (make about 15 slices):
3 eggs
8 tbsp. oat bran
16 tbsp. wheat bran
10 tbsp. whey protein powder (natural, no added flavour)
5 tbsp. Greek style yogurt (I increased this to 6 tbsp.)
12g dry yeast
5 tbsp. warm water (I increased this to 10 tbsp.)
( for the cheese buns I added 150gs of grated mature cheddar cheese & a teaspoon of garlic puree)

tsp. salt


Preparation:
  • Line little baking form (19cm long and 8 cm wide) with baking paper.
  • In a large bowl mix all the ingredients.
  • Pour the mixture into the baking form and cover with tea towel. Leave in a warm place for about 40 minutes to rise.
  • Bake for 10 minutes at 200C and then for 15 minutes at 190C. ( I cooked these for 25 minutes at 180c)
  • Let it cool down a bit before slicing.
This gives a good texture, and tastes fantastic even if I do say so myself, the mixture made six large burger buns & six 'scone' size buns enough to last me the rest of the week.
 
I still need to get Whey Protein Powder & oat bran before I can try this. Will wait til I get back off holibobs.
 
I've just worked it out as 21.5g per burger bun if you make six, which is OK but higher than I expected. They do have lots of fibre though that would help.

Carol it's easy peasy...the easiest one I've made.

Mark the whole loaf is only 71.6gs carbs...so using the same mixture plus the cheese 150 grams which come in at around 4gs carbs...in total it's 75.6gs...so divided by six they come in around 12.5 per burger bun...if you make the loaf and slice it as recommended it's is 4.7 per slice...certainly a lot less than 21.5 per bun.
 
Just have had a slice of the bread, warm out of oven with butter. Really nice, filing but reminded me of the flax seed bread, but nicer.

Good to hear that Carol...glad you enjoyed it & did you find it was easy to make...it's under 5gs of carbs per slice...and you can add any flavouring you want to it...I've put chilli in it...garlic & cream cheese.

It was easy to make, bit messy measuring out spoons of dry stuff but put the oven on for a bit then off to let bread rise in warm place. Would maybe put pumpkin/sunflower seeds on the top next time, or nice with cream cheese and garlic. Do you add it before cooking instead of some yogurt?

Depends what you use Carol...I use the garlic puree or some chilli in oil & still put the yoghurt in...the cream cheese would be different...I would still put some yoghurt in too...just a couple of spoons in addition to the cream cheese...yep sunflower seeds are good...any kind of seeds...poppy or chia...I keep meaning to weigh out how much the spoon measurements come to...would be easier weighing them...haven't got round to it yet.
