Beef curry with what

Having just cooked an amazing beef curry, I didn't give much thought what to have with it.

Mrs Alan will have rice, but what can I have, bless her she just gone to the shops for a cauliflower to make a riced collie, but what else could I have ??

I always have broccoli and green beans with curries and chillies. Sounds awful, but I really like it now. I cook rice in the rice cooker for Mr Vonny and son, and steam my veg on top.

She's just come back with some Cauliflower, but my last thought was broccoli as we always have it in for the dogs and green beans as I grew a ton of them this year and have loads in the freezer.

Mrs Alan is an excellent cook, but this diabetes thingy has given her a few more challenges and I don't want her not to have the things that she likes just to accommodate me (but I know she will)

Poppadoms are low carb. It depends how much you’re restricting your carbs. But yeah veg of various sorts is a good option. I like to roast cauliflower in a marinade of cinnamon and cumin (search nigella’s cauliflower and chickpeas but just do the cauliflower if you want a recipe). I prefer roasted cauliflower to riced cauli.
 
It does depend on how many carbs you are aiming per meal and if there are very few carbs in your curry you may be fine with a small pitta bread or roti.

TBH, I have cut out all known and obvious carbs and that goes for sugars as well to give myself a kick start in order to get my BG and weight down.
My next blood test in a week or so will tell me how I've done ??

Cauliflower, minced ginger, garlic, carrots, corn kernels, peas, spring onions, cashews or almonds, soy sauce or tamarind.
If having as a meal then make an omelette and chop on top.

I keep pre-prepared cauliflower rice from Tesco in the freezer. It sounds lazy - how hard is it to rice a cauliflower!? :rofl: - BUT, although I like cauliflower when it is roasted or prepared with cheese etc., I'm not keen on the way cauliflower rice smells or tastes! Something about it being frozen makes the flavour milder - and it tastes closer to rice-rice to me!
Not really for curry but it makes an excellent base for a cracking (no pun intended) egg fried rice!
 
I would go with what @Thebearcametoo and have poppadoms as they are low carbs.If you do have cauliflower I would roast it instead of having cauliflower rice as I don't like the smell.
 
The curry was oh so hot, but we did indeed have riced cauliflower with it and Mrs Alan also did a "Raita" (greek youghurt cucumber chopped mint and a squeeze of lemon juice) which was lovely and just took some of the heat out of it

While not a curry, I enjoy a large bowl of stir fry and never miss the rice or noodles.

Not always, but on this occasion it was one of our very hot ones and needed something just to balance the flavours
 
I cut a butternut squash in half lengthwise, scoop out the seeds and roast it. The bowl part makes an ideal container for anything you’d use a jacket potato or rice for e.g chilli.
