Basic low carb cake recipe

110g softened butter
110g Greek style yoghurt (I use full fat)
1 cup Splenda (or other sweetener equivalent) If you don't have an overly sweet tooth cut this down to 3/4 cup.
1 tsp vanilla paste or 2 tsp vanilla essence
170g ground almonds
1.5 tsp baking powder
4 eggs beaten

Stir the softened butter and yoghurt together with a hand or electric whisk. Add the sweetener and mix well. Beat the eggs and add a little at a time beating in well. Add the vanilla essence. Fold in the ground almonds and baking powder.

Heat oven to gas mark 4. grease and line a 23cm cake tin or a medium loaf tin and bake for 30 - 40 minutes until a skewer comes out clean.

You can then add any flavour ingredients to make this cake whatever you like. I often add half to 3/4 of a peeled and cored eating apple diced up, or a pear or add some diced up preserved ginger from a jar + a couple of tbs of the syrup. You can add cocoa powder or any other flavouring. A couple of tbs very strong instant coffee makes a great cake.

Sorry not carb counted it cos it depends on what exactly you do use i.e. apple/pear/ginger...

Yes, thank you after I typed I realised I’ll add it as a recipe and sort it from there . I am looking forward to trying it . My birthday is end of June so I have time
 
I should do the carbs anyway and can do calories at the same time. I was just watching a film when I picked up the post
 
Oups - I thought it was gas mark 3, not 4 - blame the steam coming off my coffee blurring my vision.....

Carbs for the whole basic cake are 36.8. serves 10. Sorry thought my app did calories too, it doesn't.
 
Gas mark 4 is 350F,180C or 160 fan

I worked it out and it comes to 186 cals but unsure as it then came out as 2g of carbs and yours is 3.6 so it is complicated .
