someone suggested a way diabetics can enjoy yorkshire puddings... Just make it with skimmed milk!

Why didn't we think of that before??

Make pancakes with cottage cheese and soya flour - they are lovely and light and don't taste of cottage cheese at all!
 
Who / where is "someone"?

Lower fat alternatives are part of the advice to people with diabetes, so it's not really bad advice, just not the whole story, as carbohydrate and portion size are also important.
 
I make ordinary yorkshires with semi-skimmed milk (equal parts flour, egg and milk) We were told that yorkshires don't work if you use wholemeal flour.
I calculate each yorkshire as 1cp and that has always worked well so far.
