1 large Aubergine
1 large onion
1 Tin of chopped tomato
1 Chilli
1 carton of passata
Generous dessert spoon turmeric powder
Garam Massala
Curry powder if not to your taste (I add later)
Black Pepper
Cube of frozen ginger and garlic (I buy in Tesco the large cubes)

Fry onion lightly in olive oil then add garlic, ginger, Aubergine, chilli and turmeric and soften for about 5 minutes. Then add tomatoes, passata (if you like it saucy) and other spices. I like it hot so add quite a bit of spices. Normally get 3 or 4 portions out of it. It tastes better days later.

I am recently diagnosed type 2 with very high BS. Now I am testing I tested before and 2 hours after eating lunch and my BS was lower than before lunch. I ate it without rice or bread.​
