Asparagus and Parmesan Cheesecake

Found this lovely little recipe on the Tesco website tonight, thinking about giving it a go but will need mini loaf tins first!
Ingredients
30g melted butter
100g ryvita, finely crushed
250g cream cheese
2 medium eggs
125g asparagus tips
75g grated parmesan
Salt and pepper
Method
Combine crushed ryvita and butter until you have a mix that resembles wet sand and press into 6 mini loaf tins (9cmx7cmx4cm) and chill in fridge till set
Preheat oven to 160c
Cream together cream cheese, eggs and seasoning until smooth and fold in the parmesan
Distribute evenly on top of the bases and sit asparagus in rows in the mixture
Place on a baking tray and bake for 40-50 minutes until just set, remove and cool on a wire rack
use a sharp knife to help turn them out then chill until ready to serve

I once saw a recipe like this used on 'Come Dine With Me' and thought then it looked delicious (but you wouldn't need much!). However I think different crackers were used then.
 
It looks awesome I've found the loaf tins on Amazon but after today's expenses will have to wait to get them x
 
I'm sure you could use a normal cake tin and then slice it, or even ramekin dishes if you have them - we seem to have collected a few from the Gu desserts we've consumed so let me know if you'd like some!

Aww thanks for the offer but that just reminded me I have 3 in the cupboard 🙂 thanks for that haha x
 
Or if youve got some muffin cases you could chop up the asparagus to fit and make little ones.

I make tiny crustless quiches/ frittata in muffin cases. A v low carb snack and a great way of using up odds and ends of cheese, cold meat, veg...
 
Sounds delicious. Let us know how you get on. I have looked at loads of different websites since being diagnosed pre-diabetic last year, including on here, and found lots of lovely things to eat. To think my colleagues at work thought i was making my life a misery being so hung up on it all. Not at all, I am enjoying finding many new and healthy things to eat.
