Anyone tried the new craze for SWEET POTATO TOAST?

Hi all I was trawling around looking at bread recipes etc., and came across all the photos of Sweet Potato Toast - with loads of toppings!!! Seems one slices the sweet potato to quarter of an inch then toasts them a few times until browned. Then add sliced or creamed avocado, cheese, fish, peanut butter, ham or whatever.

I wonder if it would be better to par-boil them first, then toast them - to make them quicker to toast, and to lower the inherent chemicals?

Might be worth a try both ways. Has anyone tried sweet potatoes this way? Thanks Alison
