I do a lot of cooking and baking with coconut oil, and one of the recipes I was looking at called for coconut sugar, not something I've heard of before. I did a bit of research and discovered it's crystallised palm sap essentially. It's allegedly as sweet as sugar but has a GI of around 34 as opposed to 64. Since I don't do artificial sweeteners (they taste too sweet and like battery acid at the same time to me) I'm always interested in more natural ways to sweeten baked goods that have less impact on blood sugar. Just wondered if anyone had come across it before?

I'm just about to try a new recipe for salted chocolate coconut almond bars, made with almonds, desiccated coconut, coconut oil, honey and dark chocolate, hopefully they'll be rather delicious and quite low carb. I have a slightly sweet tooth but I like my sweet treats to have some nutritional value, and made from whole foods so I'm always trying out new ideas 🙂
